Gujarati Cuisine: Dessert, Mithai, Sweet Dish

Kansar is a sweet dessert from Gujarat, India. Used to cook on every happy occasion, The dish plays a part in traditional wedding ceremonies. Also, Serving Kansar to guests is considered a sign of respect in Gujarati culture.

Kansar | Lapsi

Cooking Time: 30 Minutes

Pre-Preparation Time: Not Needed

Level Of Cooking: Medium

Serving: For 4 to 5 persons

Ingredients:

Wheat Flour-200-500gm (slightly Coarse In Texture)
Ghee-25-30gm / Oil-2 To 3 Teaspoon
Oil-3-4 Teaspoon
Jaggery-100-125gm
Water-200-500ml
Almonds-4-5 Pieces (sliced Thin For Garnish)
Cashew Nuts-4-5 Pieces (sliced Thin For Garnish)
Powdered Sugar- As Per Taste (for Garnish)

How To Cook:

Step 1: Take a deep frying pan. Add water and allow it to boil on slow flame.

Step 2: When small bubbles start forming around the edge of water, add jaggery and ghee/oil to it. Stir the mixture and allow it to heat on slow flame.

Step 3: Simultaneously in a bowl add wheat flour and mix it with oil.

Step 4: When the water starts boiling add this mixture of flour to it slowly and stir thoroughly for 5-7 minutes. You can use a tava beneath the frying pan for indirect heat transference. This will avoid the chances of the mixture getting stick or burnt to the base of the pan.

Step 5: C...ook the mixture till it reaches soft consistency. It should not feel sticky on touching. For a more crispy texture add 5-10gm of coarse wheat flour to the mixture.

Step 6: Turn off the heat and allow the mixture to settle for few minutes.

Step 7: Garish it on a serving plate with almonds, cashew nuts and sprinkle powdered sugar(optional).
