Punjabi, Kashmiri Cuisine: Main Course, Sabji

Dum Aloo also known as Aloo Dum is a potato based curry dish. "Aloo" means potato and "Dum" means slow-cooked. It is a part of the traditional Kashmiri Pandit cuisine, from the Kashmir Valley.

Cooking Time: 25 Minutes

Pre-Preparation Time: Not Needed

Level Of Cooking: Medium

Serving: For 5 to 7 persons

Ingredients:

Baby Potatoes (Small Size Potato) - 500 Gm
Tomato - 750 Gm
Onion - 150 Gm
Garlic Cloves - 10 To 15
Sugar - 2 To 3 Tablespoon
Oil - 200 Gm
Cumin Seeds - 1/2 Tablespoon
Milk Cream - 2 Tablespoon
Cumin Coriander Powder - 1 Tablespoon
Ginger Chilly Powder - 3 Tablespoon (6 Cloves Of Green Chilly & Small Piece Of Ginger)
Red Chilly Powder - 1 Tablespoon
Ghee - 2 Tablespoon
Salt - As Per Taste
Coriander Baves - 1 Tablespoon

How To Cook:

Step 1: Boil the potatoes peal the skin and make holes in it with the help of fork.

Step 2: Fry potatoes on medium heat.

Step 3: Grind onion and garlic to form a paste. Add ginger chilly paste (or 6 cloves of green chilly & small piece of ginger) to it.

Step 4: Cut small pieces of tomato and make pulp.

Step 5: Add 2 tablespoon ghee in a vessel and heat it on medium flame. Add cumin seeds to it. Add the onion + garlic + ginger + chilly paste to it and fry it till it turns pink.

Step 6: Now add tomato pulp to it. Add 1 tablespoon red chilly powder, 3 tablespoon sug...ar, 1 tablespoon cumin coriander powder, 1 tablespoon firely chopped coriander laves and salt to taste.

Step 7: Stir the mixture well and allow it to boil for 5 minutes. Now add the fried potatoes and 1 tablespoon Punjabi garam masala to it. Stir well and allow it to cook for another 10 to 15 minutes. Turn off the heat and add 2 tablespoon milk cream to it.

Note: You can use boiled Potatoes instead of fried Potatoes (skip Step2 for this)

Dum Aloo is one of my favorite vegetarian recipe but I never know Dum represent slow cooking of Aloo here, I always thought its representation of spices used to cook sabji its self.
