Thandai is an traditional Indian cold drink, most commonly consumed in north India and also associated with the Maha Shivaratri and Holi or Holla mahalla festival. There are many variants of thandai and the most common are badam (almond) thandai and bhang (cannabis) thandai.

Thandai Sharbat

Cooking Time: 25 Minutes

Pre-Preparation Time: 20 Minutes

Level Of Cooking: Easy

Serving: For 5 to 6 persons

Ingredients:

Full Cream Milk : 1.5 L
Almonds : 25 Pieces
Cashew : 20 Pieces
Pistachio : 30 Pieces (unshelled)
Watermelon Seeds : 3 Tablespoon
Poppy Seeds : 3 Tablespoon
Saffron : Few Strands
Sugar : 250 Gm
Green Cardamom : 8 - 10
Rose Petals : 20 - 25
Cinnamon : 0.5 Stick
Black Pepper Balls : 8 - 10

How To Cook:

Step 1: Prior preparation - Soak almonds, cashew, poppy seeds and watermelon seeds in water for 15-20 minutes. Remove almond skin after that. Also, grind cinnamon stick into fine powder.

Step 2: Add some milk to almonds, cashew, poppy seeds and water melon seeds to grind them into a fine paste.

Step 3: Heat the rest of milk in a vessel. As soon as it starts to boil add sugar. When the sugar is blended completely add rose petals, saffron, cinnamon powder and green cardamom to it.

Step 4: When milk is boiled add the paste to it and stir well. Again boil it for another 5 - 7 minutes.

Step 6: Serve Chilled.
